Chrissy Teigen's Wild & Jasmine Rice with Sausage & Caramelized Onions - Made Vegan

Ahh...wild rice, such a classic and versatile dish for any occasion! We knew we had to modify this recipe because it's simple, delicious, and well, because, we are huge fans of Chrissy Teigen's witty humor and browsed her new website to see what recipes we could make vegan.

With the simplicity of this dish, you'll probably find yourself making this over and over and maybe even with your own modified versions! For the holidays, it's actually the perfect dish as well. Just imagine some sweet cranberry sauce drizzled over it with a slice of turk'y. Or, even some savory gravy? That sure hits the spot, doesn't it? *drools*

INGREDIENTS

1-1/2 cups of wild rice
4 cups of Pacific's Organic Vegetable Broth  (more if needed)
1 cup of jasmine rice
2 cups of water
1/2 teaspoon salt
1 pound Beyond Meat Hot Italian Beyond Sausage
3 tablespoons olive oil
1 pound chopped sweet onion
5 cloves of minced garlic
2 tablespoons chopped sage
Kosher salt
Freshly ground black pepper
4 scallions (white and green parts) sliced

Optional: Mix in your favorite vegetables such as Sliced Carrots or Frozen Sweet Corn!

PREP TIME

  1. Bring wild rice with 3-1/2 cups of the vegetable broth to a boil and simmer for until tender for about 45 minutes.
  2. Bring jasmine rice with water and salt to boil for about 20 minutes until cooked.
  3. Dice sausages and brown in a large skillet for about 10 minutes until golden.
  4. Add oil and chopped onion into large skillet and cook for about 10 minutes until golden.
  5. Stir in garlic and sage and cook for an additional 2 minutes.
  6. Mix in sausages into large skillet along with the wild rice and jasmine rice along with the remaining 1/2 cup vegetable broth.
  7. Season with salt and black pepper to taste.
  8. When everything is fully cooked through, fold in the sliced scallions.
  9. Serve and enjoy!
